Wednesday January 7th – Knife Skills

This class will hone your knife skills.  Learn shortcuts and tricks for cutting and chopping that will speed up your preparation time in the kitchen.

Thursday January 15th - The Art of Slow Cooking

Slow cooking is a great way for busy working families to cook.  Most of the cooking is done without any need to monitor the process.  Once you get the slow cooker going it does the rest.  All you do is prep and eat.

Wednesday January 21st – Cooking with Chef Bryan

I am always looking for new recipes to put on my menus.  In this class we will do recipes that I am working on and you will learn how to alter recipes to fit your own tastes.

Thursday January 29th – Basic Sauces

Sauces finish off many dishes; in this class we will discuss the different types of sauces and how to make them.  From the most basic stocks to the more technical complicated emulsion sauces.

Wednesday February 4th - Basic Cooking Skills

This is your introduction to cooking, we will talk about how and where to buy the best and most fresh ingredients and then we will get into the basic cooking techniques to include:  sautéing, roasting, poaching, frying, grilling, braising and blanching.

Thursday Feb 12th – Healthy Cooking Class

Healthy cooking is more a way of life than a cooking style.  You can cook as healthy as you want but if you don’t learn how to eat healthy then you are defeating the purpose.  In this class we will talk about eating healthy and preparing the types of food you like to eat with healthy cooking techniques.

Wednesday Feb 18th – Spectacular Seafood

A great class for the seafood lover, we will talk about how and where to buy the best seafood and when to use different cooking techniques with the different varieties of fish and seafood.

Thursday February 26th – Be Your Own Personal Chef

Come to this informative class and learn techniques and food safety information for make ahead meals.  Spend a couple of hours in one day and prepare a week’s worth of meals.  This class will help you to become more efficient in the kitchen buying food in bulk and work with weekly menu plans.

Wednesday March 4th – Intermediate Cooking Skills

Do you have the basics down but looking to advance in your skills.  This class will help you to understand the process of different cooking techniques and when to use them.

Thursday March 12th – Cocktail Party Favorites

Everyone likes to entertain, in this class I will show you some great recipes and techniques for preparing some simple dishes that will astonish your guests at your next party.  Learn ways to pre-prepare the items so you can actually enjoy your party rather than working through it.

Wednesday March 18th – For the Love of Beef

This class is for the real beef lover.  Prepare a 3 course beef dinner and learn how to break down large cuts of beef and what to use the different cuts for.  We will also talk about why different cuts of beef require different cooking methods to achieve the best result for that cut.

Thursday March 26th – Vegetarian Favorites

Are you looking for new ideas for side dishes or main courses for vegetarians?  In this class we will discuss vegetables, potatoes and grains.  With a little know how you can spruce up you vegetarian and side dish menus.
